Pork Black Curry
Ingredients
1 Kg pork, cut into bite size pieces
20 Dried chillies
2 tsp freshly ground Black Pepper
Piece of a Rampe leaf (about 3 inches)
Stem of a Lemon Grass
Curry leaves
Garlic
Piece of Ginger
5 Cloves
5 Cardamoms
7 pieces of Goraka
10 Red Onions (Rathu Lunu)
2 tsp Roasted curry powder (Thunapha) -
little oil
Salt to taste
Method
Fry the chillies in the little oil until dark.
Grind them with red onions, garlic, ginger, curry leaves and rampe to a fine paste.
Soak the Goraka in some warm water for a few minutes and grind Goraka too to a paste.
Mix the grounded pastes well with the cut meat.
Add black pepper and salt to this mixture.
Add water to cover the contents and cook until the meat is done properly and the water is absorbed to the meat.
At this point sprinkle roasted curry powder over the curry and cook further till the pieces are nicely coated and dry.
This preparation could be kept for about a week without chilling. You may heat the pot daily to preserve it.
Pork Chillie Curry
Ingredients
500g Pork (with or without fat)
4 peices goraka
2 teaspoons chillie powder
1 teaspoon curry powder
1 teaspoon ginger paste
1/2 teaspoon giner paste
2" peice of cinnamoncurry leaves
2 tablespoons oil
1 chopped onion
2 chopped green chillies
1/4 teaspoons fennel seeds (Maduru)
1/4 teaspoons Fenugreek seeds (uluhaal)
1 cup water
salt to taste
Method
Wash thoroughly the Pork and cut into requirted size cubes. add the chillie powder, curry powder, fenugreek seeds, Goraka, ginger and garlic paste and salt and mix well. Leave for 1/2 an hour to marinate.
Heat the oil in a pan and fry the onions curry leaves, green chillies, for 1 minute and add the fennel seeds and mixl. Then add the marinated pork and mix well. cover for 2 minutes under medium heat and then add the water. Cover and cook for at least for half an hour on low flame. Taste for salt. The curry should thicken and well settled.
Pork Curry
Ingredients
1. 4lbs pork
2. 20 red onions
3. 5 pips of garlic
4. 1 ginger
5. 4 tsp chilli powder
6. 1 tsp gronnd goraka
7. 1 tsp sugar
8. 2 tbs black curry powder
9. 2 tsp oil
10. 2 tbs raw rice pounded
11. 4 limes
12. 2 cloves
13. 10 cardamons
14. karapincha

Method
Cut pork into small piece. Mix well with
all the curry powders and leave for 1
hour. Fry the onions in oil. Then add
in the pork with all the ingredints, and
cook in one cup of water.
Chilli Hot Devil Pork
Serve 4 to 6 potions
Ingredients
For 1 kilogram of Pork
1. One kilo of Pork with or without bones and less fat. Cut into 1' size chunks. Marinate with Black Pepper, Coconut or Cider Vinegar, 1-1/2 table spoon full of Soy Sauce, 1/2 teaspoon of sugar. Mix thoroughly and leave for 45 minutes or longer.
2. Chop up the following into 1/2" or slightly larger size pieces.
Two large Onions.
Two Large Tomatoes.
100 grams of Curry Chilies (Malumiris)
Four to six bulbs of garlic chopped or sliced fine.
1-1/2 Tablespoons of red dried chilly crushed to retain pieces.
1-1/2 Tablespoons of roasted curry powder
3 bulbs of Cloves and cardamom each and a little curry leaves.
Method
Cook the pork on medium heat in covered pan until juices have reduced to a thick oily gravy. Check for salt taste before adding further salt.
Place the remaining ingredients into the cooked pork and allow to fry and cook. Stir contents for even cooking. Reduce the fire to keep food warm and add a little shredded lemon grass a few minutes before serving. Do well with Rice, Bread, Roti, Hoppers, String Hoppers. Complementary dish with rice would be Lentils made Sri Lanka Style, and some fried Papadam. Enjoy, This is yours.
Devilled Pork
Ingredients
1. 1 tbs chillie sauce
2. 1/2 tsp lime juice
3. 2 bombay onions grated
4. 1 tsp dry mustard
5. 3 desertspoons worchester sauce
6. 11/4 tsp sugar
7. 11/2 tsp salt
8. 1/4 tsp chillie powder
Method
Drain the chops.Wipe them dry.Brown the
chops in a hot greased frying pan.Heat
the marinate and 1/2 cup water. pour it
around the chops.Reduce the heat. Simmer
the chops covered until they are nearly
tender,uncover them and continue cooking
until they are done.OR alternatively layers
of pineapple chunks and layers of chops in a
pyrex dish and bake till tender for 1 hour.
If desired, slightly thicken the gravy with
Pineapple Pork Kebabs
Ingredients
400 g bonelesss pork
1 carton(200g) non fat fruit salad yoghurt
a few mint leaves, chopped
1 Can (450g) pineapplepieces(unsweetened)
Method
Remove fat from pork and cut into cubes.Place in a bowl with yogurt and mint.Stir thoroughly to coat pork. Cover and refrigerate fire a few hour.Drain pineapple pieces.Thread pork and pineapple alternatively on skewers.Barbecue pork until its cooked through, basting occasionally with yogurt.
Savory Pork
Ingredients
500g pork
oil for deep frying
3-4 cloves garlic
5-10 slices of young ginger
50g red onions
curry leaves
1/2 tsp mustared seeds
a piece of cinnamon
1/2 tsp cumin seeds
A few pieces of dried chillies
3 green chillies
1/4 cup coconut milk
1 tbls chillie powder
1 1/2 tbls black curry powder
1 1/2 tsp vinegar
1 tomato
1 big onion

Method
Buy pork that has more oily parts and cut it in to pieces and deep fry them.when deep frying, all the oil that was in the pieces of pork will go in to the frying oil and you may see crunchy pieces of pork.Wipe them well with kitchen tissues until all the oil is absorbed.
Temper all the ingredients (ginger,gralic,red onions,curry leaves,mustard seeds,cinnamon cumin seeds,and pieces of dried chillies) until golden brown and add the pieces of pork, green chillies (cut in to halves) chillie powder, black curry powder, vinegar and salt to taste. Add a little coconut milk and cook covered for 10 min till it is well coated.Finally add rounds of B onion and tomato and mix well.
Sweet & Spicy Ginger Pork
Ingredients
1 kg pork cut into little pieces
100g ginger chopped
25 g garlic chopped
50 g onion chopped
2 soup spoon of sugar
1 soup spoon of chillie powder
1/2 soup spoon of sesame
5 soup spoon of Soya sauce
Salt & pepper
Method
Season the meat with salt & pepper and set aside for around 30 minutes.
Heat a sauce pan with little bit of oil.
Add Ginger, garlic, then onion, sesame. Fry until the ingredients get golden brown.
Add chillie and meat with 2 spoons of soy sauce, mix all and fry for about 5 more minutes(until the meat gets tender).
Add water just to cover the meat and cook under low heat for about 40 minutes (until the water is reduced to half.
Heat a little pan with the rest of soy sauce and sugar, cook until its get caramelized.
Add it to the meat and cook for another and take off from the fire.
You can eat this with the Rice or Noodles.
