Beef Patties
Ingredients
225 g flour
40 g butter
1 egg
1/4 ts salt
25 ml lemon juice
Filling
225 g beef
50 g onion
2 chile, green
1 cardamom
1 clove
1 tomato
100 g boiled potato
75 ml oil
1 curry leaf sprigs
1/4 ts salt
1/4 ts pepper, black
1 ts coriander
1 ts chile powder
1/2 ts cumin
1 ts vinegar
1/2 lime, juice of
50 ml coconut milk, thick
1 l oil
Method
Sift the flour into a bowl and rub in the butter. Separate theegg and add the yolk to the flour along with the salt and lemon
juice. Mix in sufficient water to make a stiff dough, knead well andput on one side for 30 minutes. Mince the beef, chop the onion and
chile, crush the cardamom and clove, dice the tomato and cube thepotato. Heat the oil, add the onion and curry leaves and fry until
the onion turns light brown. Add minced beef, chile, cardamom,clove salt pepper, coriander powder, chile powder, cumin vinegar and
stir fry for 5 minutes. Add the tomato and potato and cook for a further 3 minutes.Pour in the coconut milk, bring to the boil and simmer for 5 minutesAdd lime juice. Remove from the heat and allow to cool slightly. Rollout the pastry on a lightly floured board and, using a pastry cutter,cut circles in the dough Beat the egg white. Place a little beef mixture in the centre of each pastry circle, apply the beaten egg white to the edges and fold patty in two. Seal the edges and deep fry until golden brown. Drain well.
Chicken Pattis
Ingredients
4 c. finely chopped chicken or turkey
2 eggs, beaten
1/2 c. chopped celery
1/2 c. chopped onion
1/4 c. dried bread crumbs
1 to 2 oz. diced pimento
2 to 4 tbsp. oil
1/2 tsp. poultry seasoning
Method
Mix everything, except oil. Chill. Make patty and coat each patty with bread crumbs. Fry until golden brown.
Creamed Chicken Potato Pattis
Ingredients
1 1/3 c. non-fat dry milk, powdered
3/4 c. all-purpose flour
1 tsp. salt
1/2 c. butter
Method
In medium bowl combine powdered milk, flour and salt. Cut in butter until crumbly. Transfer to sealed container and refrigerate until needed. Makes 3 cups.
Ingredients
3/4 c. sauce mix
1 1/3 c. water
1 1/2 c. cooked chicken
1 c. peas (fresh or frozen)
1 (2 oz.) can chopped mushrooms, drained
6 potato patties, cooked
Method
In pan, combine sauce mix and water; cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more. Stir in chicken, peas and mushrooms; heat through. For each serving, place a potato patty on plate and ladle chicken mixture over top. 6 servings.
Chicken and Turkey Pattis
Ingredients
2 c. cooked shredded chicken or turkey
2 eggs
1/2 c. dried bread crumbs
1 tsp. Worcestershire sauce
2 tbsp. mayonnaise
1/4 tsp. dry mustard
4 green onions, chopped
Dash of salt and pepper
2 tbsp. vegetable oil
Method
Place chicken or turkey, eggs, bread crumbs, Worcestershire sauce, mayonnaise, dry mustard, green onion, salt and pepper in a bowl. Use beater in bowl to mix. Using a 1/3 cup measure, shape mixture into patties. Fry in vegetable oil until golden brown. Drain on paper towels.
Beef Lindstorm Swedish Beef Pattis
Ingredients
1 1/2 lbs. finely ground lean beef
1 egg
1 tbsp. finely chopped onion
1 c. finely diced, cooked potatoes
1 tbsp. salt
1/4 tsp. pepper
1 c. finely diced cooked beets
Butter
Method
Combine meat with egg, salt, and pepper; mix very well. Carefully mix in onion, potatoes, and beets. Shape meat mixture into 6 large, flat patties. Melt butter in a large skillet. When butter turns golden brown, add patties. Fry until golden brown; turn and fry other side until desired doneness. Serve patties topped with fried eggs.
Ground Beef Pattis
Ingredients
1 lb. ground beef
1 egg, slightly beaten
1 med. potato, peeled & shredded (3/4 c.)
1 sm. onion, finely chopped (1/4 c.)
2 tbsp. finely chopped green pepper
1/4 tsp. salt
Dash of pepper
2 tbsp. salad oil
1 can (12 oz.) vegetable V-8 Juice
Method
Thoroughly mix beef, egg, potato, onion, green pepper, salt and pepper in medium bowl. Shape into 6 patties. In a 10 inch skillet, brown patties in hot oil over medium heat. Pour off any accumulated fat. Pour juice into pan. Reduce heat to low and cover pan. Cook 20 minutes or until done, basting occasionally with pan juices. During the last 10 minutes of cooking, uncover to thicken sauce.
Stuffed Ground Beef Pattis
Ingredients
2 lbs. ground beef
2 beaten eggs
1 c. dry bread crumbs
1/2 c. milk
2 tsp. salt
1 tsp. pepper
2 c. stuffing
2 cans (10 1/2 oz. each) cream of chicken or mushroom soup
1/2 can water
Method
Mix ground beef, eggs, crumbs, milk, salt, pepper until blended.Divide into eight portions. Flatten each portion into a thin patty.Prepare stuffing. Spoon 1/4 cup stuffing on half of each patty; fold over other half to cover dressing; seal edges. Fry in hot fat until both sides are brown. Place in baking dish.Mix soup with water and pour over patties. Cover and bake at 350 degrees for 40 minutes.
Spicy Pork & Salmon Pattis
Ingredients
1 lb. hot & spicy pork sausage
1 can pink salmon
1 c. Italian bread crumbs
1 c. finely chopped onions
1 egg
1/4 tsp. garlic salt
1/4 tsp. red or black pepper
Method
Mix ingredients thoroughly. Spread more bread crumbs on a plate. Make mixture into patties and roll in bread crumbs and fry.
Pork & Rice Pattis
Ingredients1 c. cooked rice
1 sm. minced onion
1 1/2 c. ground pork
1 tbsp. minced green pepper
1/2 c. cream
1 tsp. salt
1/2 tsp. sage
Pepper to taste
2 c. tomato juice
Method
Blend all ingredients except tomato juice. Shape into patties. Place into buttered casserole. Bake until meat is set, then pour tomato juice over meat patties and bake 45 minutes to 1 hour in medium oven.
Holiday Pork Pattis
Ingredients
5 lbs. ground pork, coarse
1/2 lb. sharp Provolone cheese, shredded
1 med. onion, chopped
1 tsp. parsley, optional
1 lg. can crushed tomatoes
1 tbsp. black pepper
2 tbsp. applesauce
Combine all ingredients and mix well. Shape into large patties and place in ungreased baking pan. Bake in 350 degree oven for approximately 1 hour. Will yield about 16 patties.
