Apple Crumble
Ingredients
10 Apples,
200grs.Brown sugar,
200grs Flour,
1 Citron,
3 Spoons Margarine,
4 spoons of water,
2 spoons of Almond or Cadju powder,
3 spoons of White sugar
1 spoon of Cinnamon powder
Method
Cut each apple into 8 to 10 slices, arrange on a buttered dish.
Cover with white sugar, sprinkle the lemon juice and cinnamon
powder on it.
Mix the butter, flour,almond/cadju powder, brown sugar and the
water. Crumble up this mixture. Sprinkle this mixture on the
apples. Bake on a moderate oven for 30 to 40 minutes.
Apple Cream Pie
Ingredients
2 medium green apple sliced thinly
2 eggs
110g caster sugar
2 tablespoons plain flour
2 teaspoons grated lemon ring
425 cream
250g packaged cream cheese,softened
1 tablespoon mixed peel
40g raisins chopped finely
1 teaspoon ground cinnamon
PASTRY
185g plain flour
1/2 teaspoon cinnamon
55g caster sugar
1 teaspoon baking powder 2 teaspoons grated lemon rind
125g butter, chopped coarsely
1 egg yolk
2 tablespoons dry sherry
Method
1) Roll out pastry large enough to line 19cmx29cm rectangular slice pan trim edges.
20 Arrange apple in overlapping lines in pastry shell. Best eggs and sugar in small bowl with electric mixer until thick; gradually add flour, beathing well between additions. Add rind 125ml of the cream,cream cheese,peel and raisins mix well
2)pour filling over apples; bake in moderate oven 45 minutes. Beat remaining cream; spread evenly over top of pie. Sprinkle with cinnamon.
Pastry Combine flour, cinnmon,sugar, baking powder and rind in medium bowl; rub in butter. Beat egg yolk and sherry in small bowl with electric mixer until combined. Add to flour mixture; mix well, forming a smooth ball.
Banana Cream Pie
Ingredients
3/4 cup sugar.
1/3 cup all purpose flour or 3 tbs cornstarch.
1/4 tsp salt.
2 cups milk.
3 egg yolks, slightly beaten.
2 tbs butter.
1 tsp vanilla.
One 9-inch baked pastry shell.
(Meringue made from the leftover egg
whites, optional).
1 1/4 cups of whole milk or half-and-half.
Pinch salt.
Pinch pepper.
2 tablespoons butter.
2 teaspoons maple syrup.
1 teaspoon cinnamon.
1/4 teaspoon ground cloves.
1/2 teaspoon ground nutmeg.
1/4 teaspoon ground ginger.
9 inch pie pan filled with your favorite
crust.
Method
Combine sugar, cornstarch, and salt in a saucepan. Add milk gradually. Cook, stiring constantly, over medium heat til bubbly. Cook and
stir an additional 2 minutes and remove from burner.Stir small amount of hot mixture into egg yolks, immediately add egg yolk mixture to hot mixture and cook for 2 minutes, stiring constantly. Remove from heat.Add butter and vanilla and stir until smooth.Slice 3-4 bananas into the cooled baked pastry shell.Top with pudding mixture and spread meringue (if desired) on top of the pie. Bake at 350 degrees for 12-15 minutes. Cool.
Banana Yougurt Pie
Ingredients
2 frozen bananas, peeled and chopped.
1 banana, finely sliced.
2 cups of rolled oats.
1 cup of pitted dates.
1 cup of low-fat plain yogurt.
1 cup of low-fat evaporated milk, chilled.
¼ cup of lemon juice.
¼ cup of boiling water.
3 tablespoons of cocoa powder.
2 tablespoons of orange juice.
1 teaspoon of vanilla extract.
1 teaspoon of unflavored gelatin.
1 teaspoon of ground nutmeg.
½ teaspoon of vanilla extract.
Method
Combine the rolled oats, dates, vanilla extract, orange juice and cocoa powder in a food processor. Blend for 5 minutes, or until the mixture sticks together.Press the mixture thinly around the sides and base of a suitably sized pie dish and refrigerate. Place the gelatin in a small bowl and pour the boiling water over top of it, then dissolve by stirring. Set aside to cool.Place the frozen bananas in a food processor or blender and blend until smooth.Add milk and blend for 5 minutes.Add extra vanilla and yogurt and mix throughly.Add dissolved gelatin. Pour the mixture into the base of the pie dish and refrigerate until firm.Soak the extra banana in the lemon juice, slice and place on top of the pie.Sprinkle with nutmeg.Serve as desired.
