Pol Sambol
Ingredients
2 cups fresh grated, coconut*
1 tbsp of chili powder
/12 tsp of chillie pepper flakes
Dash of pepper
Salt to taste
3-4 small red onions (shallots) or 1/2 red onion finely diced
1 tbsp finely chopped curry leaves (optional)
1 green chille finely diced (optional)
1 tbsp of maldive fish (optional)
2-3 tbsp lime juice
Method
If using a mortar and a pestle (vangediya); add the chillie powder, chillie flakes, and salt to it and grind to a paste.
Grind the all the ingredients above except lime in a mortar and pestle (wangediya). Mix in the coconut. Squeeze the lime juice, mix and adjust salt to taste. Serve.
Alternatively you can grind in a food processor or mix with your hands in medium size bowl.
* If fresh coconut is not available, you can use desiccated unsweetened coconut. Add about 3/4 cups of water to it and micro for a minute before using.
Lunu Miris
Ingredients
2 tbsp of chillie powder
1/2 tsp of salt
1/2 onion (finely chopped)
1 tbsp maldive fish (optional)
1/2 lime
MethodGrind the all the ingredients above except lime in a motar and pestle (wangediya). Squeeze the lime juice, mix and serve.Alternatively you can grind in a food processor too.
Katta Sambol
Ingredients
2 tbsp of chillie powder
1 tsp of salt
1 tbsp maldive fish (optional)
1/2 lime
Method

Gotukola Salad
Ingredients
1 Bundle Gotukola
8 Red onions sliced (small)
2 Green chillies sliced
1 Teaspoon Pounded Maldives fish
1/2 Lime
3 Teaspoon Salt water 2 Teaspoon
Scraped coconut(optional).
Method
Wash the Gotukola well and shred them very fine.
Slice the Onions and Green Chillies.
Spread the salt water and squeeze the onions.
Mix all the ingredients together.
Add 2 teaspoons of scraped coconut if desired.
Okra (Bandakka) Sambol
Ingredients
200g bandakka (ladies fingers/okra)
salt to taste
2-3 tsp lime juice
2 green chillies chopped
1 big onion chopped
1/2 tsp pepper powder
Method
1. Boil or steam bandakka (ladies fingers/okra) till cooked but firm
2. Slice into thin pieces
3. Mix all the ingredients, add to the boiled bandakka (ladies fingers/okra) and mix well
Bitter Gourd (Karavila) Sambol
Ingredients
1lb Bitter gourd(karavila)
Sliced Onions
1 Tomato(cut into small squres)
1tspn Maldive Fish(umbalakada)
Shredded coconut
Lime juice
Salt to taste
2 green chillie peppers(chopped)
Method
Wash the bitter gourd(karavila) well.Use a grater and grate the bitter gourd or finely chop it(Discard the seeds).Then add all above Ingredients and mix well.
*If it's too bitter add more lime juice.This a very healthy way to eat Bitter gourd.
Curry Leaf (Karapincha) Sambol
Ingredients
2 cups curry leaves
2 tbsp shredded coconut
2 cloves garlic chopped
Small piece of ginger chopped
2 green chillies finely chopped
1/2 tspn mustard powder
1/2 tspn black pepper powder
1/2 Lime
Salt to taste
Method
Add chopped garlic, ginger, green chillies, mustard powder, black pepper to a food processor. Squeeze 1/2 of a lime and 1 tspn water to the mixture and grind well. Now add the curry leaves and a little bit of water and grind it further till it becomes a paste. Finally, add the shredded coconut, salt to taste and grind it until well blended. Enjoy with Rice and curry or Those (dosa). Karapincha (Curry Leaf) controls high blood pressure, heart disease , diabetes and high cholesterol. Therefore this is a very healthy sambol.
Cabbage (Gowa) Mallum
Ingredients
1 Cabbage
Turmeric powder
Salt to taste
unraosted curry powder
2 cloves garlic
1/2 cup shredded coconut
1 tbsn mustard powder
2 green chillies
lime juice
Method
Wash the cabbage well and shred or cut it into very small pieces.Add some turmeic powder and salt with a little water and cook for a while.(cabbage contains water so don't add too much).
Chop the garlic and green chillies.Then add shredded coconut,mustard powder, lime juice, curry powder, curry leaves and chop everything together using a food processor or a grinding pot.Add the coconut mix into the cabbage and stir well.When the coconut mix is cooked remove from fire.
Carrot Sambol
Ingredients
2 or 3 large carrots
1 chopped green chillie
Sliced onions
Shredded coconut
Lime juice
Salt to taste
Method
Peel the Carrots and grate it well(use a carrot grater).Now add all the above ingredients and mix well.
Cucumber Salad
Ingredients
1 large Cucumber
1 medium size tomato
1/2 of a bell pepper(green or any other color)
1/2 cup pineapple chunks
salt to taste
lime juice
black pepper powder(optional)
Method
Remove the peel of the cucumber and cut into small cubes.Now cut the tomato, bell pepper and pineapple(if the chunks are too big) into small cubes as well.Place all the ingredients in a bowl add sufficient salt, lime juice and a little bit of black pepper. Mix well and enjoy with rice and curries.
Fried Bitter gourd (Karavila) Sambol
Ingredients
3-4 large Indian bitter gourd (Karavila)
1 medium size onion sliced
2-3 green chillies or 1/2 of a green bell pepper
1 tomato cut into cubes
lime juice
Salt to taste
black pepper powder(optional)
Method
Wash the karavila well and slice them very thinly (you can use a grater with a slicing blade).
Add a little tumeric powder and salt, mix well and deep fry the karavila until golden brown.
Add the fried karavila to a bowl and add the sliced green chillies or bell pepper,
onions and cubed tomato. Finally add salt and lime juice to taste and mix well.
Enjoy with rice and curry.
Green Jack Fruit (Polos) Mallun
Ingredients
1 Green jack fruit (2 cans of green jack fruit)
Turmeric powder
Salt to taste
(a)Ingredients
2 tspn Mustard powder
1 tspn black powder
chopped 1 clove garlic
1 tbsn curry powder
shredded coconut(1/2 cup)
(b)Ingredients
1 tspn mustard seeds
Sliced onion
Curry leaves
Rampe(pandan leaves)
2 or 3 dried whole red chillies
Method
Peel the outer skin of the Green jack fruit and chop it into very small pieces.Now add salt and turmeric powder and a little bit of water and cook for awhile.Chop all the (a)Ingredients together with shredded coconut and add a little salt and add to the boiled green jack fruit mix.When the coconut mix is well heated take it out of the stove.
Heat a pan with a little cooking oil and temper the (b)ingredients and add it to the cooked dish and mix well.
Kale Mallun
Ingredients
1 Bunch Kale
2 small red onions sliced
1 tspn Maldive fish
1 chopped green chilli
1 tspn cumin powder
Lime juice
Shredded coconut
Method
Wash Kale leaves well and take the stems out.Then chop it very thin(you can use a food processor)and put it into a pan.Now add chopped onions,maildive fish,chopped green chillies,cumin powder and salt to taste.Cook it for a short while in the stove and add shredded coconut and lime juice and mix well.
*To preserve the nutritional values do not cook leaves for along time
Pol (Coconut) Mallun
Ingredients
1 1/2 tspn Maldive fish (umbalakada) or small shrimp (kunisso)
1/2 onion sliced
2 cups shredded coconut
1 sliced green or red chillie
Salt to taste
2 tspn tamarind juice
1 piece of sliced goraka
little bit of red chillie powder
1/2 tspn Turmeric powder
1/2 tomato sliced
few curry leaves and a small piece of rampe
1 cup water
Method
Add maldive fish, sliced onions, sliced chillie, tomato, salt, tamarind juice, sliced goraka, little bit of red chillie powder and curry leaves into a pan with 1 cup water and bring to a boil. While it's boiling mix coconut and turmeric powder. When the maldive fish is cooked add the coconut mix into the curry and cook for a while stirring all the time. When the coconut is well cooked remove from the stove. This goes well with String Hoppers or Rice packets.
Seeni Sambol
Ingredients
5 large Onoins peeled and finely chopped
1/4 cup Maldive Fish
1 1/2 inch Ginger root (crushed)
8 cloves garlic (crushed)
3 tbs crushed red Chilies
5-6 cardamoms
3-4 cloves
1 small sprig Curry leaves
1-2 pieces Rampe
1 piece Sera
1 piece Cinnamon
Salt to taste
1 tsp Tamarind paste
2 tbs Sugar
4-6 tbs Vegetable oil
Method
Mix the first 12 ingredients well. Heat the oil in a shallow pan. Add the mixed onions and keep stiring. When the onions are well fried and dry, add the tamerind paste and keep stiring until well mixed. Allow to fry a few minutes longer. The mix will turn dark brown when well fried. Add the sugar and keep stiring for a little while longer. Taste and adjust salt if required.
