Mutton Curry
Ingredients:
1 lb Mutton
1 medium onion chopped
2 green chilies chopped
4-5 curry leaves
1 inch piece of Rampe(optional)
1 piece of lemon grass(sera) (optional)
3 cloves of garlic
1/2 inch piece of ginger
1 ripe tomato
1 tsp chilie powder
1 tsp roasted curry powder
1/2 tsp turmeric
1/2 tsp black pepper
1/2 tsp mustrad seed(crushed)
salt to taste
1 tbsp cooking oil
1 tbsp vinegar
Method:
Trim any excess fat from the meat, then cut the meat into 1 inch
cubes. Grind the ginger and garlic into a paste.
Mix the chillie powder, curry powder, turmeric, pepper, salt
and the lemon grass with the meat, cover and allow to marinate for
about 1-3 hours.
Fry the onion, green chilles, curry leaves, rampe and the ginger
garlic paste in the oil under low heat. When the mixture is
golden brown add the chopped tomato, mustard seeds and cover
and simmer for about 3 minutes.
Now add the meat, add vinegar and stir. Cover and cook under
low heat for about 30-40 minutes or until the meat is tender.
Remove from heat and serve hot.
Mutton Kebabs
Ingredients:
1 1/2kg chevon leg steak
1 clove crushed garlic
Large can pineapple pieces
2 large red capsicums
2 tblspns soy sauce
2 tblspns lemon juice
Method
Cut the steak into 5 cm cubes, drain the pineapple and put aside the juice for the marinade. Remove seeds from the capsicums and cut the flesh into 5cm pieces. Combine 250mls of pineapple juice with the soy sauce, lemon juice and garlic. Add the meat and stir well. Allow to marinate for at least 2 hours. Thread meat on skewers, alternating it with the pineapple and capsicum. Grill or barbecue for 10 minutes or until tender, basting frequently with the marinade.
Mutton Masala
Ingredients:
1/2 kg. mutton cut into pieces
1/2 cup coconut oil or vegetable oil or ghee or butter
2 tbs. curry powder
1/2 fresh coconut grated and finely grounded
salt and chili powder to taste
1 tsp. cardamom, cinnamon and cloves altogether grounded
rampe and few curry leaves
4 large onions minced fine
a few coriander leaves.
Method:
boil meat with 1/2 the onion, salt and 1cup of water and rampe in a pressure cooker till meat is tender. in another pan fry remaining onions in oil till golden brown. add coconut and fry till light brown. add spices, curry powder, curry leaves, and chilli powder and cook the meat till gravy thickens, and serve hot with rice or bread.
Stir-fry Mutton with Oyster Sauce
Ingredients
600g Mutton strips
1 tabls oil
3 tabls silvered almonds
Piece of fresh ginger,peeled and grated
3 cloves garlic,crushed
3 carrots, thinly sliced
2 red peppers,thinly sliced
2 sticks celery,thinly sliced
2 shallots, chopped
100g snow peas
1/3 cup oyster sauce
Method
Heat half oil in wok.Stir fry almonds,ginger and garlic 1 minute.
Add mutton strips,stir fry 3-4 minutes . Remove.
Heat remaining oil in wok. Stir fry vegetabes 1-2 minutes.
Return almonds, ginger,garlic and mutton. Stir in oyster sauce,
allow to heat through 2-3 minutes. Serve with rice.
Mutton Chops
Ingredients
10 small Mutton Chops
1 tsp Pepper powder
Salt to taste
2 tbsp or more vinegar to marinate
1 tbsp Worcester Sauce (if available)
2 tbsp of Golden Syrup
Method
Wash the mutton chops and mix it with pepper, salt, vinegar, Worcester sauce and golden syrup.
Marinate the chops for half an hour or more.
Lay the chops in an oven proof tray or dish.
Heat the oven for 200 C.
Place the tray with mutton chops in the pre-heated oven and cook for 45 minutes.
When done, remove the chops from the oven.
Serve hot with noodles or rice or as a starter!
